Gen series

Gen (玄) means both BLACK and EXPERT in Japanese.   

The distinctive iron black and banded and mottled Damascus pattern of these knives reflect the tradition of Japanese beauty and harmony.  The traditional chestnut handles provide a natural grip for the hand, and the hammer on the knife stops food from sticking to the blade. 

MIYAKO SUS Damascus  

The Miyako Damascus is the masterpiece of Japanese kitchen knives! It has been designed to blend the beauty of classical Japanese knife design with the essential needs and functions of a modern chef. 

This beautiful knife features a structure made of stainless steel without seams between the blade and handle. Using rust-resistant triple-layered steel, the master artisans of Seki carefully edge the knife to ensure a long-lasting, vivid sharpness.

YAMOTO SERIES

The Yamato Series is the result of the passionate desire of the male staff at the Shizu foundry in Japan to "make knives for men"! As even the name "Yamato" suggests, these knives are indeed designed with men in mind. They retain the appearance of traditional Japanese kitchen knives but are crafted to be easy to use and substantial enough for everyday use by seasoned chefs.  

The Yamato series is different from the Yuri series, which is designed for women, in that the size and weight of both the blades and the handles are designed to be perfect for men's hand size and strength. The Yamato series is characterized by the "hammered pattern" on the blade, a design that evokes not only a sense of ancient knife appearance, but which allows the blade to easily separate from the food being cut.  It is truly an authentic Japanese kitchen knife.  

YURI SERIES 

The knives of the Yuri Series were designed by the women staff of Shizu-Hamono Co. Limited, in conjunction with Aiko Yamamoto, who is a product designer from Seki City in Japan. She started with the concept of developing knives that would fit comfortably in women’s hands and that were, in addition, eco-friendly products. The overall aim of the team was to create knives that can be used for everyday cooking without being too heavy and overbearing, while maintaining both the specifications and appearance of Japanese knives.  

 
 

Pomme Cheeseboard Knives

Just like a hand painted antique plate or a well-used tool, we manually engrave, brush, and sharpen the blade of each “Pomme Knife” one-by-one to ensure absolute comfort when held. See for yourself the difference it makes to be working with a unique handmade knife! 

The blades are wonderfully sharp, and the entire knife is brushed with 99.9% pure 24k gold. Although the knives are available individually, the trio of cheeseboard knives includes a bread knife, fruit knife, and cheese knife. Because they are hand-forged and hand-crafted, each one is slightly different from the one that came before it, or the one after. The brushed finish creates a subtle matte texture.
