YAMOTO SERIES 

The Yamato Series is the result of the passionate desire of the male staff at the Shizu foundry in Japan to "make knives for men"! As even the name "Yamato" suggests, these knives are indeed designed with men in mind. They retain the appearance of traditional Japanese kitchen knives but are crafted to be easy to use and substantial enough for everyday use by seasoned chefs.  

The Yamato series is different from the Yuri series, which is designed for women, in that the size and weight of both the blades and the handles are designed to be perfect for men's hand size and strength. The Yamato series is characterized by the "hammered pattern" on the blade, a design that evokes not only a sense of ancient knife appearance, but which allows the blade to easily separate from the food being cut.  It is truly an authentic Japanese kitchen knife.

In the Yamato series, the Santoku is the basic knife that chefs use most regularly.  It is the essential all-purpose knife that is known for ease of use. The stylish black handle is made of "laminated reinforced wood," making it easy to grip and functional enough to withstand daily water exposure when cleaning. The blade is made of triple-layered molybdenum-vanadium stainless steel with rust-resistant stainless steel on both sides for long-lasting, brilliant sharpness.  

 
 

Yanagiba 

The Yanagiba knife in the Yamoto series is the fillet knife that shines with its superior performance and sharpness. It is classically used to cut beautiful slices of sashimi, and its surface is hammered, which not only gives it the appearance of an ancient sword but allows the fish to separate more easily from the blade. In the Yamoto series, the Yanagiba blade is a bit shorter than most knives, making it especially easy to use at home, or for ease-of-use during long hours in professional settings. It is also double-edged, so it is suitable for both left and right-handed chefs. 

Deba 

The Deba knives of the Yamoto series excel at cutting beautiful, thin strips in fish and meat alike. It features a double-edged blade that can be used by both right- and left-handed individuals.
