Damascus steel design, highly valued for its beauty in medieval Syria, has been reproduced for use in the blade. The charm of the Damascus look is achieved at the forge by hand folding and pounding the blade repeatedly until 33 layers are formed. Under the hands of the famed blacksmiths of Seki, this results in a blade of superior durability, sharpness, and beauty. The Miyako knife blade is specifically engineered to be neither too thin nor too thick. In this way, blade strength is balanced elegantly with efficiency and ease of use. Once shaped and cooled, the rust resistant steel (AUS-8) is polished to a mirror surface, sharpened by hand, and a matte finish is then applied to achieve a soft luster. Because rust is the biggest weakness of kitchen knives, AUS-8 was chosen to virtually eliminate this problem. Widely used for medical tools, as well as heavy-use kitchen utensils, this steel is easily sharpened, holds an edge beautifully, and is easy to handle and clean.
